Mango rice

Mango Rice - A tangy rice recipe made with mango and carrot. It can be made a little spicy by use of traditional Indian spices.



Recipe Ingredients

* Basmati Rice - 1 cup
* Raw Mango (large) - 1
* Gingelly Oil - As required
* Carrot - 1
* Fenugreek Seeds - 1/2 tsp
* Mustard Seeds - 1 tsp
* Curry Leaves - A few
* Red Chillies - 3
* Green Chillies - 5
* Turmeric Powder - A Pinch
* Cardamom - 1
* Cloves - 2
* Cinnamon stick (1/2") - 1
* Salt to taste



Preparation

First wash and soak the rice for 10 minutes. Drain and keep aside.

Take a kadai(wok) and cook rice with 2 cups of water. Cook till each grain is separate. Keep aside.

Peel the raw mango and carrot and grate them separately. Heat oil in a separate kadai(wok). Shallow fry mustard seeds, curry leaves, red chillies, green chillies and turmeric powder. Add grated mango and carrot in it. Sauté and cook till done. In between add required salt and water(1/4 cup) also. Put off the flame after 5 minutes.

Mix the cooked rice with this using a fork. Roast fenugreek seeds, powder it and sprinkle on the rice.
