Malai Kofta

Malai Kofta is a special dish enjoyed most with Jeera Rice or Naan. Kofta is a urdu word which means ground soft ball of meat or vegetables or paneer and seasoned with spices.

Most of the Indian Restaurants have kofta recipe in their menu.

In this Page we have put together recipe for Kofta balls and Kofta curry also. Just take care to make ready the balls few minutes before the curry else they will turn soft and soggy.

Kofta Balls Ingredients

* Paneer (Grated) - 1 cup
* Boiled Potatoes (Grated) - 1 cup
* Corn Flour - 3 tbsp
* Oil - Little as per requirement
* All purpose Flour - 3 to 4 tbsp
* Green Chillies (chopped) - 3
* Coriander Powder - 1 tsp
* Red Chilli Powder - 1 tsp
* Cumin Powder - 1 tsp
* Nuts (chopped) - 2 tsp
* Coriander Leaves (chopped) - half hand full
* Salt to taste

Kofta Balls Preparation

First make 1 cup mix of grated vegetables using carrot, beans, peas, sweet corn or any kinds of vegetables and mix them together and put them on thin cloth. Squeeze out extra water from the vegetables.

In a large bowl mix Paneer, Potatoes, mixed vegetables, nuts, green chillies, coriander powder, cumin powder, red chilli powder, coriander leaves and salt.

Mix all these properly and make round balls of this mixture. Smear these balls with corn flour. Fry these Koftas in boiling oil. Keep turning them in the oil on medium flame. Cook till they turn brown and golden in colour. Take them out and put them on paper napkin.

Kofta Curry Ingredients

* Tomatoes (chopped)- 2
* Onions (chopped) - 2
* Cashew Nut Powder - 2 tbsp
* Cream - 1 cup
* Cumin Seed Powder - 1 tsp
* Red Chilli Powder - 1/2 tsp
* Garam Masala - 1/2 tsp
* Oil - As per requirement
* Shahi Jeera - 1/2 tsp
* Coriander Powder - 1 tsp
* Chopped Coriander Leaves
* Ginger Garlic Paste - 1 tsp
* Turmeric Powder - 1/2 tsp
* Salt to taste

Kofta Curry Preparation

In hot oil, add onion and fry them till golden brown. Add ginger garlic paste, turmeric, tomatoes, red chilli powder, cumin powder, coriander powder and garam masala. Cook til tomatoes are nicely cooked. Blend the above mixture into a smooth paste.

Take some oil in a pan and add Shahi Jeera. In this add above paste. Add some water and bring it to boil. Add cream and cashew nut powder and bring to boil. Gently put Kofta balls to this gravy and put off the flame. Koftas will automatically absorb the gravy or sauce. Garnish it with coriander leaves.
