Lagansala Stew

Lagansala Stew - Parsi vegetarian stew made with mix of vegetables. It's simple to make as involves frying the vegetables and then cooking with normal spices.



Recipe Ingredients

* Sweet Potatoes (shakargandi), cut to pieces - 2
* French beans (cubed) - 50g
* Capsicum (cubed) - 1
* Yam (jimikand) (cut to small cubes) - 50g
* Carrots (cubed) - 4
* Green Peas (shelled, boiled) - 200g
* Celery (finely chopped & boiled) - 20g
* Cooking Oil - 1 cup
* Onions (chopped) - 2
* Green Chillies (chopped) - 3
* Turmeric Powder - 1/2 tsp
* Cumin Coriander Powder - 1 tsp
* Ginger Garlic paste - 1 tsp
* Tomatoes (chopped) - 2
* Vinegar - 1 tbsp
* Worcestershire sauce - 1 tbsp
* Salt to taste



Preparation

Take a kadai(wok) and heat oil in it. Once it is hot, fry all the cubed vegetables, separately and keep aside.

In the same oil, sauté the onions until soft. Add green chillies, spices and ginger garlic paste, sauté for 2 minutes. Add the fried and boiled vegetables, tomatoes and salt. Cook covered with a heavy lid, containing a little water, until the mixture is reasonable dry. Stir occasionally.

Add vinegar and Worcestershire sauce and mix well. Serve hot garnished with coriander leaves.
