Lachha Paratha

Lachha Paratha - Layered and Stuffed Paratha for a heavy breakfast. Enjoy with Lime Pickle and Yogurt.



Recipe Ingredients

* Maida (Refined Flour)- 2 cups

* Cooking Oil - For frying

* Desi Ghee (Clarified Butter)- 3/4 cup

* Saunf (Aniseeds), crushed - 2 tsp

* Milk - 1 cup

* Water - 3/4 cup

* Salt to taste



Preparation

Sieve the refined flour and salt together. Add Milk and Water and knead into a smooth dough. Add 2 tsp of Desi Ghee and Aniseeds. Knead again to make a smooth dough.

Divide the dough into equal size balls and roll out to 6" pancakes. Pat 1 tsp of Desi Ghee evenly over one side. With a sharp knife, cut from the centre to the outside edge. Roll tightly, from the cut, all the way around so that it makes a neat cone. Stand the cone upright on its base and press it down into a patty. Similarly, work the remaining pieces of dough. Refrigerate them, covered, for an hour on a butter paper.

Roll out each patty into 6" diameter.

Heat a tawa (griddle) and shallow fry the patties on low heat until golden on both sides. Serve hot along with Curd.
