Kuzhambu Recipe - Gravy made with steamed pumpkin (kaddu) in yogurt. Serve it along with Rice and Papad.
Recipe Ingredients
* Pumpkin, peeled and cut into small pieces - 350g
* Chana Dal (Split Bengal Gram) - 1 tsp
* Arhar Dal (Split Red Gram) - 1 tsp
* Rice Powder - 1 tsp
* Yogurt - 2 cups
* Refined Oil - 1/2 tsp
* Mustard Seeds - 1/4 tsp
* Cumin Seeds - 1 tsp
* Turmeric Powder - 1/4 tsp
* Coconut, grated - 3 tbsp
* Green Chillies - 2
* Curry Leaves - 5
* Salt to taste
Preparation
First steam the pumpkin with a little salt and water. Mix the yogurt with salt, turmeric powder and rice powder.
Soak the arhar dal, chana dal and cumin seeds in warm water for 5 minutes. If the coconut isn't freshly grated it should be soaked as well. Drain and grind all the ingredients along with the green chillies.
Mix this paste with the yogurt mixture. Add the yogurt mixture to the cooked pumpkin and cook on low heat till it simmers. remove from flame and keep aside.
Take a pan and heat oil in it. Once it is hot add mustard seeds and curry leaves. When the seeds start spluttering, remove and add to the pumpkin mixture.
Serve with rice.
