Kos Usili

Kos Usili - South Indian dish of cabbage and arhar dal. It is made in a dry form and eaten along with other dishes like rasam and white rice.



Recipe Ingredients

* Arhar Dal (Split Red Gram) - 1 cup
* Cabbage, chopped - 300g
* Dry Red Chillies - 6
* Refined Oil - 6 tbsp
* Mustard Seeds - 1/4 tsp
* Turmeric Powder - 1/4 tsp
* Asafoetida (hing) - A Pinch
* Salt to taste



Preparation

First soak the Arhar Dal in hot water for 25 to 30 minutes. Drain and grind coarsely with dry red chillies, salt , hing and turmeric powder.

Steam cook the Arhar Dal paste in a pressure cooker upto 3 whistles. Remove and crumble it with your fingers or a ladle.

Cook the cabbage separately or you can steam cook this along with the Arhar Dal paste.

Take oil in a pan and heat it. As it is hot, sauté the mustard seeds till the seeds start spluttering. Add the crumbled mixture and the cooked cabbage.

Stir fry till the mixture is to your liking. Make it soft by extra frying and drying.
