Kobi na Muthiya is a cabbage(bandh gobi) snack very popular in Gujarat. It takes 30 minutes to make, but worth making this delicious snack to enjoy with your near and dear ones.
* Cabbage - 300g
* Gram Flour - 1 cup
* Cooking Oil - 3 tbsp
* Mustard Seeds - 1/2 tsp
* Cumin Seeds - 1/2 tsp
* Curry Leaves - 8 to 9
* Green Chillies - 3
* Asafoetida - a pinch
* Ginger Paste - 1 tsp
* Bicarbonate of Soda - 1/4 tsp
* Lemon Juice - 1 tbsp
* Sugar - 1 tbsp
* Red Chilli Powder - 1tsp
* Turmeric Powder - 1/2 tsp
* Salt to taste
First clean the cabbage under running water. Shred it finely and sprinkle salt on it. Mix well and keep aside for 15 minutes. After that squeeze out the excess juice from the cabbage.
Add gram flour, asafoetida, green chillies, soda, sugar, lemon juice, salt (1 tsp or as per taste), ginger paste, cooking oil (2tbsp) to the cabbage. knead with water to make soft dough.
Wet your palms and make sausage shape rolls. Steam the rolls in a steamer or cooker for 15 minutes. Remove, cool and cut into 1/2 inch pieces.
Take a Kadai (wok) and heat oil (1 to 2tbsp) in it. Once it is hot add mustard seeds and sauté. Add red chilli powder, cumin seeds, curry leaves, turmeric powder and the steamed rolls. Sauté for 5 more minutes on medium flame and serve with coriander-tamarind chutney.
