Khuska

Khuska - A fragrant rice preparation with any gravy dish. A popular rice preparation of Muslims, this biryani is prepared during festivals and important family functions.



Recipe Ingredients

* Basmati Rice - 1kg
* Desi Ghee (Clarified Butter) - 250g
* Cloves - 5 gms
* Milk - 1 Ltr
* Salt to taste
* Water - 1 Ltr

Preparation

First soak rice for 20 minutes.

Take a kadai(wok) and heat 3/4th of the ghee in it. Once it is hot add cloves till they crackle to release flavour. Remove them from the ghee and keep aside on a plate.

Add rice in the kadai and stir for a few minutes. Then add milk, water and salt. Bring to a boil. When almost cooked, repeat the clove crackling in ghee and add to rice. Cover it and let it cook on medium flame. It will not take more than 10 minutes now.

Serve hot along with Dal Fry.
