Khichuri

Khichuri - A simple Bengali Rice Recipe to make and serve with Fish curry.


Recipe Ingredients

* Basmati Rice - 400g
* Moong Dal (roasted) - 150g
* Cooking Oil - 2 tbsp
* Ginger Paste - 1 tsp
* Bay Leaf - 1
* Coconut (grated) - 2 tbsp
* Cumin Seeds - 1 tsp
* Turmeric Powder - 1/2 tsp
* Red Chilli Powder - 1/2 tsp
* Cloves - 2
* Hing (Asafoetida) - A Pinch
* Cardamom (Choti Elaichi) - 3
* Cinnamon (1/2") - 2
* Green Chillies (cut) - 2
* Sugar - 1/2 tsp
* Salt to taste



Preparation

First wash, clean and soak rice for 15 to 20 minutes.

Take a pressure cooker and heat oil in it. Once it is hot, add cumin seeds and bay leaf in it. As seeds start crackling add coconut and mix well. Add ginger paste, turmeric powder, red chilli powder, cloves, cinnamon, cardamom, green chillies. Mix all the ingredients together for two minutes. Then add hot water in proportion of one is to two (water should be double of rice).

Now add soaked rice and roasted moong dal, salt and sugar for taste. Cover the lid of the cooker and cook for two whistles or till rice is fully done.

Remove from the flame and let the steam comes out slowly then open the lid and serve hot along with fish curry.
