Kheer or payasam is special Indian pudding loved by all. It can by enjoyed hot enriched with almonds, raisins, nuts and when served cold is also very delicious and irresistible.
Also considered as a dessert in India, this delicacy is definitely made during festivals like Diwali, Holi, Onam etc.
Recipe Ingredients
* Milk - 2 Litres
* Sugar - 1 Cup or as desired
* Basmati Rice - 1 cup
* Almonds - 2 tbsp
* Raisins - 2 tbsp
* Pistachio - 1 tbsp
* Cardamom small(crushed) - 4 to 5
* Saffron - Very little
Preparation
Soak Rice in tumbler for 30 minutes. Put Milk and sugar in a pan and let it boil. Once Milk starts boiling add rice(without water) into it.
Keep moving the mixture frequently on a medium flame till milk thickens.
Add almonds, raisins, cardamom, pistachio to the milk and rice mixture and let it remain on flame for 5 to 10 minutes more. Let it cool down after that and you can put it in refrigerator also to serve chilled.
