Khasta Kachori

Khasta Kachori - Kachori, Puri and Kheer, these form what is called in North India as Pakka Khana. Normally prepared during major festivals like Diwali and big occasions like Marriage ceremonies. Make your self these delicious stuffed puris using below recipe.



Recipe Ingredients

* Wheat Flour - 3 cups
* Maida (Refined Flour) - 1/2 cup
* Black Gram Dal (Urad Dal Dhuli) - 1 cup
* Cooking Oil - For frying
* Desi Ghee (Clarified Butter) - 1 tbsp
* Coriander Powder - 2 tsp
* Asafoetida - A pinch
* Red Chilli Powder - 1/2 tsp
* Cumin Seeds - 1 tsp
* Ani Seeds (Saunf) - 1 tbsp
* Bicarbonate of Soda - A pinch
* Salt to taste



Preparation

First clean and soak Urad Dal for 3 hours, drain out the excess water after 3 hours.

Mix wheat flour, maida, salt (1/2 tsp) and bicarbonate of soda. Sieve the flour and make a soft dough using sufficient amount of water. Cover the dough with a damp cloth and keep it aside for half hour. After half hour divide dough to equal size dough balls.

Filling - In a food processor, grind urad dal, cumin seeds, ani seeds, coriander powder, asafoetida, salt(1 tsp) and red chilli powder to a coarse mixture. In a pan sauté this mixture in desi ghee till it turns little brown. Keep it aside and let it cool down.

Take each dough ball and shape them like a cup with your hand. Fill this with 1 tbsp of ready filling. Close properly and firmly from all sides. In a Kadai(wok) heat oil. Once it is hot deep fry the dough balls on low heat till they turn crisp, golden brown, swollen and cooked fully.

Remove from kadai and put on top of a paper towel. Serve hot.
