Khara Papeta - A simple Parsi dish made by cooking Potatoes with traditional Indian spices.
* Potatoes (peeled & cut to small cubes) - 350g
* Cooking Oil - 2 tbsp
* Onions (chopped) - 2
* Tomatoes (chopped) - 1
* Cumin Seeds - 1/2 tsp
* Green Chilli - 1
* Green Coriander (chopped) - 1 tbsp
* Ginger Garlic Paste - 1 tsp
* Salt to taste
Take a kadai (wok) and heat oil in it. Once it is hot, sauté the onions till they turn golden. Add cumin seeds, green chillies, ginger garlic paste and sauté for a minute.
Add the potatoes and salt and sauté for 2 minutes. Then add 1/2 cup of water and cook on a low flame until the potatoes are tender and the mixture is absolutely dry. Add chopped tomatoes and cook for 5 minutes more.
Serve hot after garnishing with green coriander.
