Khandvi

Khandvi made with besan is a gujarati snack enjoyed most with coriander chutney or sonth (sweet chutney). Make this dish yourself in less than 30 minutes using this recipe.

Recipe Ingredients

* Gram Flour (Besan) - 250g
* Cooking Oil - 2 tbsp
* Mustard Seeds (Rai) - 1 tsp
* Buttermilk (Chaach) - 2 cups
* Ginger 1" - 1 piece
* Green Chillies (cut) - 6
* Turmeric Powder - 1/2 tsp
* Dry Red Chillies - 2
* Asafoetida (hing) - a pinch
* Coconut (grated) - 1/4
* Curry Leaves (Kadhi Patta) - 7
* Coriander Leaves (chopped) - 1 cup
* Salt to taste
* Water - 2 cups



Preparation

First grind green chillies and ginger with little water to form a smooth paste. Keep aside.

In a bowl mix gram flour, buttermilk and water together. Add turmeric powder, salt and chilli ginger paste. Mix well to make a smooth batter.

Take a pan and cook this batter on a medium flame till a thick paste like consistency is formed. Remove the pan from the flame.

Grease the reverse side of 2 stainless steel flat plates and spread the mixture as thinly as possible. While it is still warm, make 1" wide strips with a sharp knife on the spread mixture. When cool, gently roll each strip to resemble small rolls. Arrange the rolls on a serving platter.

Heat the oil in a pan, add mustard seeds, and when they start crackling add dry red chillies and asafoetida. Sauté for a few seconds, remove from heat and pour over the prepared rolls.

Garnish with coconut and green coriander and serve hot or cold.
