Dhokla, Khaman or Khaman Dhokla whatever you may call it, but all relates to the same dish. This Gujarati Snack needs no mention as it is now popular in whole of the world. The best way to eat it is to eat fresh along with your morning or evening tea.
Recipe Ingredients
* Chana Dal (Bengal Gram) - 1 cup
* Cooking Oil - 4 tbsp
* Mustard Seeds - 1/2 tsp
* Bicarbonate of Soda - 1/4 tsp
* Asafoetida - a pinch
* Green Chillies - 3
* Ginger 1" piece - 1
* Curry Leaves - hand full
* Dry red Chillies - 2
* Green Coriander leaves - For Garnishing
* Salt to taste
Preparation
First soak the chana dal overnight.
Next day morning, grind the chana dal(soaked overnight) to a coarse paste. Beat it with a spoon for 10 minutes so that air is mixed into it. Keep it aside for 12 hours to let the paste ferment.
In the evening, make a smooth paste of green chillies and ginger. Use a grinder to make the paste and keep it aside.
Take the fermented chana dal paste and add oil, soda powder, asafoetida, chilli garlic paste and little water. Beat and mix the mixture thoroughly.
Spread this paste on a greased (with desi ghee or butter) plate. Let the paste spread be 1" thick. Steam for 10 to 12 minutes (in a steamer or cooker) or till it is done. At his point dhokla will become fluffy and soft.
Allow it to cool down and then cut into cube size pieces. Take a pan and heat oil in it. Once it is hot add mustard seeds, curry leaves and red chillies. As they start crackling pour it over the dhokla.
Garnish with Coriander Leaves and enjoy with Tamarind Chutney or Toamto Sauce.
