Kervai

Kervai - Parsi Recipe of shallow fried banana cakes. You can make it ready in 15 to 20 minutes.

Recipe Ingredients

* Bananas (raw) - 6

* Cooking Oil - for frying

* Desi Ghee - 1/2 tsp

* Almonds (sliced) - 1/2 cup

* Raisins - 1/4 cup

* Cinnamon Powder - A pinch

Preparation

First boil the bananas whole along with the skin. To check it done, pierce with a knife, if it goes through remove from heat and keep aside to cool.

Then peel and wash. Refrigerate until required.

Take a kadai and heat desi ghee in it. Once it is hot, add almonds, raisins and cinnamon powder. Sauté till golden, remove and keep aside to cool.

Mash a banana, and shape into a round cake. Make a hollow in the centre and stuff with some fried fruit mixture. Seal the filling inside and pat into shape. Repeat till all the cakes are done.

Heat the oil in a pan and shallow fry the banana cakes on medium heat, till golden. Remove and drain the excess oil on absorbent paper towels.
