Kai Murukku

Kai Murukku - South Indian Snack of crisp rice spirals. Murukku is an auspicious snack for weddings in all South Indian states.



Recipe Ingredients

* Processed Rice Flour - 1cup

* Cooking Oil - For Frying

* Roasted Urad Dal Flour - 1 tsp

* Cumin Seeds - 1/2 tsp

* Butter - 1 tbsp

* Asafoetida (hing) - A Pinch

* Salt to taste

* Water - To make dough



Preparation

First dry roast the rice flour till hot. Remove from flame as soon as colour start changing. Sift through a fine sieve.

Mix rice flour, urad dal flour, hing, cumin seeds with required salt and butter. Prepare a firm dough using sufficient amount of water.

Place a clean white cloth on the floor. Grease your palm and fingers with oil. Take little dough in your fingers and spin out into small spirals, twisting the dough continuously, on the cloth. Make 2 to 3 whirls in each murukku.

Each murukku will resemble a spiral, made of rows of twisted chord. Repeat the process with the rest of the dough and allow to dry for some time.

Take a kadai(wok) and heat oil in it. Transfer each murukku onto a greased plate and gently slide into hot oil. Deep fry till it turns golden brown.

Serve on a plate.
