Kachri Ki Chutney - Chutney made of Kachri. It is a sour, cucumber like vegetable. It is sliced and stored dried. It acts as a tenderiser for lamb dishes and provided tanginess to the dishes.
Recipe Ingredients
* Kachri, ground - 30g
* Cooking Oil - To fry
* Cumin Seeds, powdered - 1 tsp
* Garlic, ground - 1/2 cup
* Onion, chopped - 1
* Red Chillies, ground - 2 tbsp
* Yogurt - 1/2 cup
* Salt to taste
Preparation
Take a kadai and heat 1 tsp of oil in it. Once it is hot add cumin seeds and garlic. Sauté for few seconds.
Add the onion and fry till they turn light brown.
Add the remaining ingredients and cook on a low flame till the oil separates. Store in an airtight jar. If refrigerated this chutney will stay for a month.
