Ishtu

Ishtu - South Indian style of Vegetable Stew cooked in Coconut Milk. You can make coconut milk by grating a coconut. Then adding a cup of hot water and blending together for 6 to 7 minutes. Subsequently strain the coconut , squeezing it out. This is called the first extract or thick coconut milk. Add one more cup of water to the grated coconut and repeat procedure. The extract this time will be thin coconut milk.

Recipe Ingredients

* Beans, chopped - 100g
* Carrots, chopped - 2
* Green Peas, shelled - 100g
* Onions chopped - 2
* Potatoes, peeled & chopped - 100g
* Refined Oil - 1 tsp
* Black Peppercorns - 1 tsp
* Coconut Milk - 2 cups
* Green Chillies, chopped - 2
* Mustard Seeds - 1/4 tsp
* Salt to taste



Preparation

First cook all the vegetables in salted water. You can cook the vegetables in pressure cooker also. It will be cooked up in 3 whistles.

Take oil in a pan and heat it. As it becomes hot add mustard seeds. When seeds start spluttering, add the green chillies and 1 cup of thin coconut milk. Boil for 3 to 4 minutes.

Add the thick coconut milk and the cooked vegetables. Mix all the ingredients well. Add black peppercorns and boil for 2 minutes more. Remove and serve hot.
