Idli

Idli - This is a pure South Indian Delicacy now popular in whole of India. In almost every restaurant you can find it. However nothing more delicious than home cooked food.

Recipe Ingredients

* Parboiled Rice - 3 cups

* Split Black Gram (Urad dal) - 1 cup

* Fenugreek Seeds - 1 tsp

* Salt to taste

* Water

Preparation

First soak the rice in water for 40 to 45 minutes. Take sufficient amount of water such that rice remain fully dipped in the water all through out 45 minutes.

Soak the split black gram in just enough water to cover for 20 minutes.

Grind separately the rice and the split black gram (add the fenugreek seeds when grinding the split black gram). Both should be finely ground.

Mix the two batters with salt and keep aside to ferment for 10-12 hours. The batter has to be kept in a warm place for it to rise.

Pour the batter into the receptacles in the plates(special ones to make this dish) and steam in a cooker. The cooked dish will be ready in 8 minutes. Remove and repeat till all the batter is used up.

Serve hot with Sambhar and Coconut Chutney.
