Gujarati Sev is a tea time snack, you can enjoy with your evening tea or along with your breakfast also. Normally in Gujarat it is serve to guests along with other snacks.
Recipe Ingredients
* Gram Flour (Besan) - 250g
* Rice Flour - 75g
* Cooking Oil - For Deep Frying
* Carom Seeds (Ajwain) - 1 tsp
* Bicarbonate of Soda - 1/4 tsp
* Red Chilli Powder - 1 tsp
* Salt to taste
* Water - As per requirement
Preparation
Take a medium size thali, mix gram flour, rice flour and oil (2 tbsp) in it. Rub until it becomes crumbly. Take care to mix 2 to 3 tbsp of oil only in the flour. Extra oil keep aside to use for deep frying.
Mix all other ingredients (except water and oil) in the flour, mix well. Knead with enough water to make a stiff dough.
Heat the remaining oil in a wok (kadai), meanwhile grease the insides of a sev making machine (you can use a noodle maker with a fine mesh also to make sev).
Fill the top container of the device with the dough. Press the dough down through the mesh directly into the oil.
Separate the sev in the oil with a fork to prevent sticking. Fry over a low flame until crisp and pale yellow. Remove with a slotted spoon and drain the excess oil on a absorbent kitchen towel.
Allow to cool and then store in a airtight plastic Jars.
