Ginger Curry

Ginger Curry is a kerala dish made in coconut oil. Mainly eaten during cool wintery days this curry is rich with traditional spices. Use below simple recipe to make this tasty ginger spicy dish.

Ginger Recipe Ingredients :

* Ginger – 50g
* Coconut Oil – 4 tbsps
* Sugar – 10g
* Coconut (cut to small pieces) – 50g
* Green Chillies (chopped) – 2
* Red Chillies – 3 to 4
* Tamarind – 20g
* Turmeric Powder – 1 / 2 tsp
* Mustard Seeds – 1 / 4 tsp
* Fenugreek Seeds – 1 tsp
* Curry Leaves – 4 to 5
* Salt to taste
* Water – 1 / 2 cup


Preparation:

First roast red chillies and fenugreek seeds and grind them to form fine powder. Keep the powder aside. Also soak tamarind in hot water and keep it aside for half hour.

Wash the ginger, peel and chop it finely and soak in hot water for 15 minutes. Drain the water out. Take a pan and put ginger, green chillies, coconut pieces, salt and water in it. Roast it on medium flame till the mixture becomes dry.

Take a pan and heat coconut oil in it. Add turmeric powder and mustard seeds, when they start sputtering add ginger mixture. Sauté till mixture turns little golden brown and then remove from fire. To this add red chilly and fenugreek powder and tamarind water. Put this again on medium flame and add salt and sugar. Mix well and bring the curry to a boil. Add water to get the desired consistency.

Serve hot along with Fried Rice.
