Ghevar

Ghevar - Rajasthani Sweet served during Raksha Bhandan and Teej Festivals. Make yourself this tasty mithai at your home.

Recipe Ingredients

* Wheat Flour - 3 cups
* Milk - 1/2 cup
* Desi Ghee (Clarified Butter) - 1 kg
* Yellow Colour (dissolved in water 2tbsp) - 1/4 tsp
* Water - 4 cups
* Ice Cubes - 4
* Almonds (chopped) - 1 tbsp
* Pistas - 1 tbsp
* Cardamom Powder - 1 tsp
* Saffron dissolved in Milk - 1/2 tsp

Sugar Syrup Ingredients

* Sugar - 1 1/2 cup
* Water - 1 cup


Preparation

First make one thread sugar syrup by mixing, stirring and boiling water(1 cup) with sugar(1 1/2 cup). keep it aside in a flat container.

In a big bowl mix together flour, milk, ghee and water(1 cup). Mix all the ingredients well to make a smooth batter. Add yellow colour to this batter. Mix well again. See to it that batter is of running consistency.

In a medium size steel container pour ghee and fill it to half its capacity. Heat it and once it is hot add glassful of batter in the center of the ghee very slowly in one continuous thread like consistency.

Allow foam to settle and add one more glass full of batter in the hole formed in the center. When foam settles again, loosen the mithai with iron skewer inserted in the hole. Put on an iron mesh to drain excess oil.

Dip ghevar in the sugar syrup and take out and put on the iron mesh to drain off excess syrup. Let it cool down and garnish with almonds, pistas and cardamom powder.

Serve it to your loved ones.
