Gatte Ki Sabzi

Gatte Ki Sabzi - Rajasthani Sabji of Gatte (Besan dumplings) in gravy or kadhi or curry.

Recipe Ingredients

* Besan (Gram Flour) - 250g

* Cooking Oil - 1 cup

* Cumin Seeds - 2 tsp

* Coriander Powder - 1 tbsp

* Turmeric Powder - 1 tsp

* Red Chilli Powder - 2 tsp

* Yogurt - 2 cups

* Water - 2 cups

* Salt to taste

Preparation

First make a soft dough with the besan, yogurt(1/2cup), salt(1/2 tsp), Oil (3 tbsp), red chilli powder (3/4 tsp) and turmeric powder (1/2 tsp).


Apply little oil on the hands and roll out 1"X 6" long cylindrical rolls of the dough.

Bring the water to a boil and slide the rolls. Cook for 10 minutes or till they become firm. Drain the water and put the rolls aside to cool for 15 minutes. Cut into 3/4" long pieces.

Heat the remaining oil, add the cumin seeds and let them crackle. Then add Besan pieces and stir fry for 2 to 3 minutes.

To the remaining yogurt, add the leftover spices and mix well. Add this mixture to the pieces, stir and cook for 3 minutes more and add salt to taste.

Add water and bring to a boil. Simmer for 5 minutes and if the gravy is thick add a little more water and boil till the oil separates.

Your Gatte Ki Kadhi is ready to serve.
