Ela Ada

Ela Ada - Kerala recipe of soft rice cake with a sweet coconut filling, steamed in a banana leaf jacket.



Recipe Ingredients

* Rice Flour (roasted) - 1 cup

* Desi Ghee (clarified butter) - 1 tbsp

* Coconut (grated) - 1 cup

* Jaggery - 1/3 cup

* Water - 1 1/2 cup

* Salt to taste

* Banana Leaves

Preparation

First place the coconut and jaggery together over a slow flame and cook well till dry.

Boil the water, salt and desi ghee together. Stir in the rice flour over low flame and mix well to a stiff paste. Remove from flame and knead to form a soft dough. Form into small lime sized balls.

Place a ball on the center of a banana leaf, cover with another leaf and press thin. Carefully peel off the upper leaf, spoon a tablespoon of coconut mixture on the surface and spread evenly leaving the outer edges clean. Fold the leaf to seal the edges.

Trim the excess leaf edges to obtain a neat semi circle. Repeat till the dough is finished. Steam for twenty minutes.

Take care to allow space for steam to pass between the breads when arranging them in the cooker, otherwise there will be uncooked portions.
