Egg Biryani - One of the easiest egg recipe to make. You can make this Biryani and can serve along with other Indian dishes like Dal Roti also.
* Basmati Rice - 300g * Eggs (hard boiled) - 6 * Oil - 2 tbsp * Onions (sliced) - 2 * Garam Masala - 1/2 tsp * Cumin Seeds - 1/2 tsp * Cashew Nuts - a few * Green Chillies (cut) - 2 * Coriander Leaves - hand full * Mint - few leaves * Ginger Garlic Paste - 1 tsp * Yoghurt - 2 tbsp * Biryani Masala Powder - 50g * Coriander Powder - 1 tsp * Cumin Powder - 1/2 tsp * Red Chilli Powder - 1/2 tsp * Saffron - A Pinch * Salt to taste
Soak rice for 45 minutes. Drain and keep aside.
First take oil in a pan and heat it. Once it is hot add garam masala, cumin seeds and onions. Add little bit of salt also. Mix properly for a minute and then add cashew nuts, green chillies, coriander leaves, mint and ginger garlic paste. Mix all the ingredients again. After 2 minutes add yoghurt, biryani masala and mix properly to make a nice masala.
In the above masala pan add 3 cups of water. Mix properly, add ready rice to the pan and mix again. Add little bit of salt in it if required. Cover the pan with a lid. Bring the whole mixture to a boil. When the water is evaporating and holes are formed in the rice surface slow the flame and cook till rice is almost fully done.
Take a plate and put cumin powder, coriander powder, red chilli powder, besan and mix. Now add boiled eggs in it. Mix properly so that spice mixture is coated evenly on eggs. In a separate pan melt butter and put coated boiled eggs in it. Rotate the eggs so that butter is coated evenly.
Once rice is ready put some butter pieces on top and put ready eggs in it. Add saffron liquid also to bring colour to it. Now topsy turn the rice and eggs slowly. Ensure eggs and rice is mixed and dish looked wholesome.
