Egg Bhurji - This tasty egg dish is loved most by the students as it is very easy and fast to make. Most of the time it is served along with Dal and Chapati.
* Eggs (beaten well) - 5
* Onions (chopped finely) - 2
* Tomatoes (peeled & chopped finely) - 2
* Green Chillies (chopped) - 1 tsp
* Coriander Leaves (chopped finely) - 1 tbsp
* Desi Ghee - 1/4 cup
* Red Chilli Powder - 1/2 tsp
* Garam Masala - 1/4 tsp
* Salt to taste
Heat desi ghee in a non-stick pan and fry the onions till golden. Add the chillies and tomatoes and cook till soft.
Add salt, red chilli powder and blend well. Add eggs and scramble quickly, on a low flame till the mixture puffs up. Add coriander leaves, continue stirring for 2 to 3 minutes.
Remove from flame and serve hot, sprinkled with garam masala.
