Dal Bati

Dal Bati - A very traditional dish of Rajasthan. Now this is popular in Gujarat, north India, parts of Madhya Pradesh like Indore etc. You can make these at your home in an hours time using below simple recipe.

Recipe Ingredients

First we will prepare the Dal as it takes a little longer and then will cook the Batis.

Recipe for Dal

* Black Gram (urad dal) - 50g
* Bengal Gram (chana dal) - 50g
* Green Gram (moong dal) - 50g
* Red Gram (arhar dal) - 50g
* Masur Dal - 50g
* Desi Ghee (clarified butter) - 4 tbsp
* Turmeric Powder - 1/2 tsp
* Onions (chopped) - 1
* Cumin Seeds - 1/2 tsp
* Cloves (laung) - 4
* Hing (Asafoetida) - A Pinch
* Ginger Garlic Paste - 2 tbsp
* Red Chilli Powder - 1 tsp
* Tomatoes (chopped) - 2
* Green Chillies (chopped) - 1 tsp
* Ginger (chopped) - 2 tsp
* Green Coriander (chopped) - hand full
* Salt to taste
* Water - 1 1/2 cup

Dal Preparation

First wash, mix and soak all the pulses together for 30 minutes.

After half hour, in s pressure cooker cook the pulses with salt, turmeric powder and just enough water until tender. This will be up to two whistles. Do not remove the steam and let it ooze out on its own.

In a kadai heat desi ghee. As it is is hot add hing, cumin seeds and cloves. Sauté over a medium flame for few seconds. Add the chopped onions and sauté till golden brown. Add ginger garlic paste and red chilli powder and cook for 3 to 4 minutes more.

Now add ginger, green chillies and tomatoes and cook till the mixture leaves the sides of the pan. Add the boiled pulses, mix well and heat through. Let it cook for 5 minutes more and then serve hot along with Batis. Don't forget garnishing with coriander leaves.

Bati Ingredients

* Maida (Flour sieved) - 1/2 kg
* Desi Ghee (Clarified Butter) - 2 cups
* Ginger Garlic Paste - 2 tbsp
* Green Chillies (Ground to paste) - 3
* Salt to taste

Bati Preparation

Take a bowl and put flour in it. Then add salt, ginger garlic paste, green chillies paste and 4 tbsp of desi ghee. Add just enough water to knead into a semi hard dough.

Divide the dough into balls of 2" diameter, to fit the hollow of the palm.

Place on a greased tray and bake in a hot oven(350 deg F) for 10 minutes. Change sides and bake again for 10 minutes. They should be lightly browned with a few cracks when fully done.

Remove and dip in melted desi ghee. Serve these hot Dal Batis along with Dal made ready above.
