Curd Rice

Curd Rice - A very simple rice recipe made with curd and cooked rice. This dish is very common serving during lunch time in southern part of India.



Recipe Ingredients

* Rice (White & Basmati) - 1 cup
* Curd (Yoghurt) - 1 cup
* Milk - 1 cup
* Oil - As required
* White Butter - 1 tbsp
* Mustard Seeds - 1/2 tsp
* Asafoetida - A Pinch
* Green Chillies (slit) - 3
* Ginger (1" & cut) - 1
* Curry Leaves - A few
* Salt to taste



Preparation

Take a pressure cooker and cook rice with 3 cups of water to a very soft consistency. Mash the hot rice with a little salt using a wooden ladle. Add butter, curd and milk. Mix and blend well.

In a separate pan heat oil (2 tsp) in it. Once it is hot add mustard seeds and as seeds start crackling add curry leaves, green chillies, asafoetida and ginger. Mix well and remove and add to ready rice and again blend well.

Serve with lime or mango pickle.
