Coriander Rice

Coriander Rice - An easy South Indian rice dish made with coriander and mint leaves. Enjoy it with Sambar and coconut chutney.



Recipe Ingredients

* Basmati Rice - 1 cup
* Oil - As required
* Cumin Seeds - 1/2 tsp
* Salt to taste


Grind together to paste

* Coriander leaves - 1 cup
* Mint Leaves - 1 tbsp
* Ginger - 1" piece
* Onion (chopped) - 1
* Green Chillies (chopped) - 2



Preparation

First wash, soak rice for 10 minutes and pressure cook with 2 1/2 cups of water. Each grain should be separate.

Take a kadai and heat oil in it. Once it is hot shallow fry the cumin seeds and ground paste for a minute or so. Mix in the cooked rice and required salt.

Sauté for a few minutes and serve with papad and raita.
