Coleslaw Salad

Coleslaw Salad - Making Coleslaw is like making confettis. You make enough of it and its fun. This salad is a excellent source of potassium and carotene, however low in fat due to use of low fat mayonnaise and yoghurt.



Recipe Ingredients

* White Cabbage (shredded finely) - 3 cups
* Carrots (finely shredded) - 1 1/2 cups
* Scallion (sliced diagonally) - 1
* Celery Stalks (sliced diagonally thin) - 3
* Dark Raisins - 1 cup
* Dried Apricots (chopped up) - 1/2 cup

For Coleslaw Recipe Dressing

* Low Fat Canola Mayonnaise - 4 tbsp
* Low Fat Yoghurt - 8 tbsp
* Oregano - 1/4 tsp
* Paprika - 1/4 tsp
* Lemon Juice - 1/2 tsp
* Black Pepper - 1/2 tsp
* Fresh Parsley (chopped) - 2 tbsp
* Salt to taste



Preparation

Take a salad bowl and mix all the vegetables with raisins and apricots. In a separate bowl mix together the yoghurt, mayonnaise, dressing herbs and spices.

Whisk both the well together. Chill in the refrigerator before serving.
