Coconut Rice - An easy and tasty coconut dish made with basmati rice. Garnish with cashew nuts and raisins to bring a rich taste. Make yourself this lovely dish in few minutes with this recipe.
Recipe Ingredients
* Basmati Rice (washed) - 1 cup
* Coconut (grated) - 2 cups
* Desi Ghee (clarified butter) - 1 tbsp
* Onion (sliced) - 2
* Turmeric Powder - 1/4 tsp
* Green Cardamoms - 2
* Cloves - 3
* Sugar - 1/4 tsp
* Cashew Nuts - 8
* Cinnamon Stick 1/2 " - 2
* Raisins (fried) - 10 to 15
* Salt to taste
Preparation
First wash and soak rice in water for 15 minutes. Drain and keep aside.
Blend the coconut with 2 cups of warm water to extract 2 cups of coconut milk. Keep aside.
Take a heavy bottomed pan and heat desi ghee in it. Once it is hot, sauté onions, cloves, cinnamon sticks and green cardamoms for 3 to 4 minutes.
Now add rice and stir fry for 1 minute. Add the turmeric powder, sugar, salt and the coconut milk. Stir well. Bring the mixture to the boil, lower heat, cover and simmer till the rice is cooked.
Serve after garnishing with cashew nuts and raisins.
