Coconut Curry

Coconut Curry is one of the easiest vegetable curry recipe. It is a south Indian delicacy very popular in whole of south India. It tastes wonderful with rice and Pickle combination.



Recipe Ingredients :

Coconut - half
Urad Dal (Yellow Lentil) – 2 tbsps
Vegetable Oil – 2 to 3 tbsps
Onions - One Small
Mustard Seeds – 1 tsp
Curry Leaves – 5 to 6
Garam Masala – A Pinch
Dry Red Chillies – 2 No’s
Salt to taste



Preparation

First make coconut milk by grinding coconut white pieces in small Jar of food processor. Mix coconut paste in water and pass it through a sieve. Make around 250ml of thick coconut milk. Add water as per requirement.

Heat oil in a Pan, add onions, mustard seeds, curry leaves, red chillies and urad dal when it is hot. Saute the mixture for sometime till onions start turning little brown. At that point add coconut milk to it and stir properly so that all ingredients are mixed completely. Add Garam Masala and Salt as per taste and your recipe is ready to savor.
