Chicken Spring Rolls serve as good starters and are enjoyed most along with Mint Chutney. These can be pre-made and cooked later also. So take up your pan and cook yourself.
Recipe Ingredients
* Chicken Pieces (boneless) - 1/2 inch
* Flour (Maida) - 250g
* Eggs (beaten) - 2
* Milk - 250ml
* Cooking Oil - 3 cups
* Onions (chopped) - 1 Big
* Ginger Garlic Paste - 1 tbsp
* Cheese (Grated) - 50g
* Garam Masala - 1 tsp
* Red Chilli Powder - 1tsp
* Coriander Leaves - hand full
* Green Chillies (chopped) - 2
* Lemon Juice - 1 tbsp
* Sugar - 1 tsp
* Salt to taste
Preparation
Take a pan and heat 2 to 3 tbsp of oil in it. Once it is hot add onions, ginger garlic paste and sauté for a minute.
Then add chicken pieces, red chilli powder, green chillies, coriander leaves and garam masala and cook on low flame till chicken pieces are done and tender. Add cheese, salt and lemon juice. Cook and mix well all the ingredients in the pan. Take it off the flame and keep aside.
Now we will make Roomali Rotis. Sieve the flour. Make a depression in the centre and add cheese, milk, sugar, salt, oil(2 tbsp) and beaten eggs. Mix and make a soft dough. Cover the dough with a moist cloth and keep it aside for 1 hour.
After that knead the dough again and make dough balls. Place each dough ball between your palms and roll to make thin rotis. Now preheat the oven to 175deg C and bake the rotis on the roasting tray for 3 minutes each. Ensure to bake on both sides.
Take each roti and cut it into small pieces. Put chicken mixture(made ready earlier)inside small rotis and roll it like a cigar. Seal the edges with roti and little water. Deep fry the rolls for few minutes and serve hot.
