Carrot Rice Make a tasty pulao with carrots and broccoli and serve along with pudina chutney or lime pickle for a mouth watering effect.
Recipe Ingredients
* Basmati Rice - 350g
* Carrots (cut and parboiled) - 100g
* Broccoli florets (small pieces) - 150g
* Oil - 2 tbsp
* Cumin Seeds - 1 tsp
* Black Pepper - 1 tsp
* Cloves - 3
* Bayleaf - 1
* Salt to taste
* Water - 5 cups
Preparation
First clean, wash and soak rice in sufficient water for 15 minutes. Drain and keep aside.
Take a heavy bottomed pan and heat oil in it. Once it is hot sauté the cumin seeds, bayleaf, cloves and black pepper till they crackle. Add the carrots, broccoli and salt and stir fry for 4 to 5 minutes.
Remove the pan from flame, discard the whole spices and keep the vegetables aside.
Take a kadai (wok) and boil water in it. As the water starts boiling add rice and cook until done and then drain excess water.
Put cooked vegetables on top of ready rice and gently mix. Serve hot along with pickle and chutney.
