Carrot Chutney

Carrot Chutney and Carrot Pickle are very tasty and simple to make. Chutney Recipe can be made with following ingredients and easy method of preparation:



Chutney Ingredients

* Carrot (big) - 3 No's
* Tamarind Paste - 1 tsp
* Urad Dal - 1tsp
* Red Chillies - 3 No's
* Garlic Cloves - 2 No's
* Mustard & Cumin Seeds - 1/2 tsp
* Coriander Leaves - 1 hand full
* Asafoetida Powder - Pinch of it
* Vegetable Oil - 2 tsp
* Salt - 1/4 tsp
* Water - 1/2 small cup


Preparation

- Dry Roast(without oil) cumin seeds, mustard seeds, Red Chillies in a pan. Put it aside and once this mixture has cooled to room temperature grind it to form powder.

- In a separate pan put oil on medium flame. Add carrots, garlic, tamarind and little water. Fry and stir till water is no more present.

- Finally add dry roasted powder of chillies, cumin seeds, mustard seeds, dal, coriander leaves, salt, asafoetida into carrot mixture. Grind it in a food processor to make a smooth paste.
