Bhakra

Bhakra - Parsi snack of deep fried flour puffs. You can make this ready and keep it for enjoying with evening tea.



Recipe Ingredients

* Refined Flour (maida), sifted - 1 kg
* Suji (semolina), sifted - 1 kg

* Vegetable Oil - For deep frying
* Eggs - 6

* Sugar - 1 kg
* Toddy - 1 litre

* Desi Ghee - 250g
* Nutmeg (jaiphal) powder - 1 tsp

* Green Cardamoms (peeled & Powdered) - 6
* Onions Seeds (crushed) - 50g

* Baking Powder - 2 tsp
* Vanilla Essence - 1 tsp



Preparation

Mix the sugar and eggs in a large bowl until the sugar dissolves. Add suji, refined flour, toddy, desi ghee, green cardamoms, onion seeds, nutmeg powder and vanilla essence and knead well.

Add the baking powder and knead once again to make a thick dough (if required, sprinkle a little cold water). Cover with a lid and keep a heavy weight over it. Let the dough stand overnight or for about 12 hours.

Next day, sprinkle a little flour on the dough and divide it into 5 to 6 portions. Roll each out into a large round about a quarter inch thick. With a round biscuit cutter, 1 1/2 " inch diameter, cut out discs.

Deep fry the discs in hot oil until dark brown. Remove and repeat till all are fried. Serve with evening tea.
