Best Egg Salad - Most of us enjoy egg in the form of omelette or as an egg curry. However you can serve eggs with salad as a totally unique appetiser.
Recipe Ingredients
* Eggs (hard boiled, shelled & sliced) - 3
* Mushrooms (sliced) - 250g
* Tomatoes (sliced) - 4
* Lettuce Leaves - to serve
* Onion (chopped finely) - 1
* Parsley Sprigs - To Garnish
* Salad Oil - 2 tbsps
* Lemon Juice - 1 tbsp
* Pepper to taste
* Salt to taste
Preparation
Prepare a dressing by combining the onion, salad oil, lemon juice and seasoning together and mixing very well. Add to it the mushroom slices and blend once again.
Heap the centre of a salad dish with lettuce leaves, mushroom dressing and surround it with tomato and egg slices. Serve at once garnished with parsley sprigs.
