Beguni - Fried Eggplant (Baingan) fritters. This recipe is made by frying Baingan pieces with besan. Cooking time is also very less around 10 to 15 minutes.
Recipe Ingredients
* Eggplants (Baingan) - 4
* Cooking Oil - For frying
* Gram Flour (Besan) - 1 cup
* Maida (Refined Flour) - 1/4 cup
* Onion Seeds - 1 tsp
* Red Chilli Powder - 1/2 tsp
* Baking Soda - 1/2 tsp
* Water - 4 to 5 tbsp
Preparation
First clean and cut Baingan into half rounds each.
In a bowl mix together gramflour, water, refined flour, onion seeds, red chilli powder and the baking soda. Keep aside and allow it to rest for at least two hours.
Take a kadai(wok) and heat oil in it. Once it is hot lower the flame. Dip the eggplant pieces in the batter and then fry in the hot oil till they are cooked and golden brown in colour.
Drain the excess oil and serve immediately.
