Begun Bhaja - Fried Baingan (eggplant) in mustard oil. It just take 15 minutes to make this Bengali dish.
Recipe Ingredients
* Baingan (Eggplant) large - 4
* Mustard Oil - 1/2 cup
* Turmeric Powder - 2 tsp
* Salt - 2 tsp
Special Tip - When buying baingan(eggplants), ensure that they are smooth to touch and of light weight. Heaviness indicates that they are overmature with too many seeds.
Preparation
First cut each baingan into quarters. Rub the each piece with salt and turmeric powder. Keep aside for half an hour.
Heat the mustard oil in a shallow pan and fry the pieces till golden brown in colour.
Drain the excess oil and serve immediately.
