Batata Nu Shaak

Batata Nu Shaak - Gujarati sabzi very commonly made in most of Gujarati homes. The flavor is little sweeter by use of sugar in the recipe.



Recipe Ingredients

* Potatoes - 4
* Cooking Oil - 2 tbsp
* Tomato (chopped) - 1
* Cumin Seeds - 1/2 tsp
* Mustard Seeds - 1/2 tsp
* Ginger Garlic Paste - 1 tsp
* Turmeric Powder - 1/2 tsp
* Hing (Asafoetida) - A Pinch
* Coriander Leaves - hand full
* Red Chilli Powder - 1 tsp
* Green Chillies (chopped) - 2
* Sugar - 1 tsp
* Salt to taste
* Water - 1 cup



Preparation

First peel and cut potatoes to medium size pieces.

Take oil in a kadai(wok) and heat it. Once it is hot add cumin and mustard seeds. As seeds start crackling add ginger garlic paste and green chillies. Sauté for two minutes and add turmeric powder, red chilli powder and hing. Mix well.

Add chopped tomatoes and stir fry for two minutes more till tomatoes become little soft. Add potato pieces, salt, sugar and water. Cover the wok with a lid and let the dish cook on medium flame for 15 minutes till it is cooked properly and gravy has thickened. Take the wok off the flame and garnish with coriander leaves.

Serve hot along with cooked Basmati Rice or Tandoori Rotis.
