Baingan Bharta is one recipe which comes to mind first amongst all Indian Vegetarian Recipes. The bharta can be made spicy, tingy by adding more of chillies or tomatoes.
Bharta Recipe Ingredients
* Baingan (Brinjals) - 2 medium size
* Oil - 2 tbsp
* Onion (chopped) - 2
* Tomato (chopped) - 4
* Ginger Garlic Paste - 2 tbsp
* Coriander Leaves - For garnishing
* Green Chillies (cut) - 2
* Coriander Powder - 1 tsp
* Red Chilli Powder - 1 tsp
* Salt to taste
Roast Brinjals on slow flame till it gets roasted from all sides. Peel off the skin and take the pulp out. Mash it and keep aside.
Take oil in a pan and saute onions till it get golden pink. Add tomato, ginger garlic paste and stir for a while till onion & tomato gets blended properly.
Now add coriander powder, red chilli powder, salt and brinjal pulp to it. Stir the mixture for 5 more minutes and dish is ready.
Garnish it with Coriander Leaves, Green Chillies and savor with Tandoori Rotis.
