Baingan Aloo

Gujarati Baingan Aloo recipe is little spicy and sweet in flavor. As per your taste you can remove the sugar from the ingredients list and cook it in a normal style.



Recipe Ingredients

* Baingan (Aubergines) chopped - 250g
* Potatoes chopped - 250g
* Cooking Oil - 4 tbsp
* Tomatoes (chopped) - 1
* Ginger Garlic Paste - 1 tsp
* Turmeric Powder - 1/2 tsp
* Coriander Powder - 2 tsp
* Sugar - 2 tsp
* Green Coriander (chopped) - 1/2 cup
* Asafoetida - a pinch
* Mustard Seeds - 1 tsp
* Red Chilli Powder - 1 tsp
* Salt to taste
* Hot water - 1/2 cup

Preparation

Wash and cut baingan to 1 inch size pieces. Heat oil in a pan and once it is hot add asafoetida and mustard seeds. As seeds start sputtering, add chopped tomatoes. Fry for few minutes and add ginger garlic paste, red chilli powder, turmeric powder, coriander powder, salt and sugar. Mix well and cook for few minutes.

Add baingan pieces and potatoes. Mix well and add hot water. Cook the dish on a low flame covered with a lid. Let it cook for 20 minutes till vegetables are dry and done.

Serve hot after garnishing with coriander leaves.
