Badhusha Recipe

Badhusha Recipe - South Indian Sweet made with Maida and sugar syrup.



Recipe Ingredients

* Maida - 1 cup

* Refined Oil - For deep Frying

* Desi Ghee (clarified butter) - 1 tbsp

* Yogurt - 1 tbsp

* Cooking Soda - 1 tsp

* Kesari Colour - A Pinch

* Essence - Few Drops

* Sugar - 1 cup

* Saffron - A Pinch

* Chopped Nuts - 1 tbsp

Preparation

First mix the desi ghee and cooking soda in a plate. Rub well with the palm to make it flaky.

Sift maida and sprinkle on this. Mix well with your fingers. Add colour and yogurt (or water) and knead to make a soft dough. Divide the dough into small balls.

Flatten each dough ball into quarter inch rounds in the palm. Make a deep depression in the centre with a finger (do not make a hole). Prepare all badhushas from all the dough balls and keep aside.

Take a kadai (wok) and heat oil in it. Once it is hot reduce the flame to slow and deep fry the badhushas one by one till done. Remove and drain out the excess oil by putting them on an absorbent paper.

Prepare sugar syrup to one string consistency. Add the essence and turn off the flame. Dip the prepared badhushas for 1 minute in the sugar syrup. Take out and arrange in a tray. Garnish with saffron and chopped nuts.
