Aval Upma

Aval Upma - South Indian dish of Rice Flakes Upma. Very easy and fast to make. Serve it as breakfast or during evening tea time as light snack.



Recipe Ingredients

* Rice Flakes - 2 cups

* Refined Oil - As Required

* Potatoes, peeled & chopped - 2

* Peanuts - 2 tsp

* Turmeric Powder - A Pinch

* Green Chillies - 3

* Curry Leaves - A few

* Mustard Seeds - 1 tsp

* Chana Dal - 1 tsp

* Urad Dal - 1 tsp

* Coriander Leaves, chopped - A few

* Salt to taste


Preparation

First wash and soak rice flakes for 10 minutes and drain out the excess water.

Heat oil in a kadai (wok). Light fry the mustard seeds, chana dal, urad dal and curry leaves. In the same kadai fry green chillies and then potatoes.

Add the peanuts and rice flakes and shallow fry for 5 minutes. Mix in the required salt and turmeric powder. Pour in sufficient water and mix well.

Cover and cook till whole of the water is absorbed and Upma is fully done. Decorate with fried Cashew nuts and coriander leaves.
