Aloo Shimla Mirch
Aloo Shimla Mirch - The best way to enjoy this dish is to eat it along with Parathas. You can take any Pickle and Raita to make the meal wholesome and tasty.
* Shimla Mirch (Capsicum) cut to pieces - 1/2 kg
* Aloo (Potatoes) - 3
* Cooking Oil - 3 tbsp
* Cumin Seeds - 1/2 tsp
* Ginger Garlic Paste - 1 tsp
* Garam Masala - 1/2 tsp
* Hing (Asafoetida) - A Pinch
* Amchur (Dry Mango Powder) - 1/4 tsp
* Turmeric Powder - 1/2 tsp
* Red Chilli Powder - 1/2 tsp
* Coriander Powder - 1/2 tsp
* Salt to taste
First boil the potatoes until two whistles. Let them cool down a bit and then peel off the skin and cut to medium size pieces.
Heat oil in a kadai(wok). Once it is hot add cumin seeds and as they start crackling add ginger garlic paste. Sauté for 2 minutes.
Add potatoes and shimla mirch pieces. Sauté for a minute and then add all the remaining ingredients. Mix well. Add very little water if required. Stir a little and cover with a lid.
Let the dish cook for 5 minutes or till shimla mirch has turn soft. Take the wok off the flame and serve hot along with crisp parathas.
