Aloo Kurma

Aloo Kurma - One of the easiest and delicious Kurma Recipe made with traditional Indian Spices and boiled potatoes.



Recipe Ingredients

* Potatoes - 4
* Cooking Oil - 3 tbsp
* Onions (finely chopped) - 1
* Yogurt - 1 tbsp
* Turmeric Powder - 1/2 tsp
* Red Chilli Powder - 1/2 tsp
* Green Chillies (cut) - 2
* Cumin Powder - 1/2 tsp
* Coriander Powder - 1 tsp
* Hing (Asafoetida) - A pinch
* Cinnamon stick 1/2 " - 1
* Ginger Garlic Paste - 1 tsp
* Cardamom - 2
* Garam Masala - 1/2 tsp
* Salt to taste
* Water- As required


Preparation

First boil potatoes until two whistles. Let them cool down a bit and then peel off the skin and cut to medium size pieces.

Take a pan and heat oil(1 tbsp) in it. Once it is hot fry potatoes until golden brown in colour. Keep them aside.

In a kadai(wok) heat remaining oil in it. Once it is hot add chopped onions and green chillies. Fry till they turn little brown then add cardamom, cloves, cinnamon stick and ginger garlic paste. Cook for 2 minutes.

Add all the remaining spices powders and salt to the kadai and mix well all the ingredients on medium flame. Then add yogurt and mix well again. As the curd becomes thicker and is mixed properly add potatoes. Stir fry and mix properly.

Add water and cover the kadai with a lid. Let the dish simmer on medium flame. In between stir the dish regularly. Cook till it turns very thick.

Take it off the flame and serve hot after garnishing with coriander leaves.
