Aloo Fry

Aloo Fry - Make sukhe aloo with amchur(dry mango powder) and other Indian spices. One of the easiest Indian vegetable dish, which you can make in 15 to 20 minutes.



Recipe Ingredients

* Aloo (potatoes) - 3
* Cooking Oil - 3 to 4 tbsp
* Green Chillies (chopped) - 2
* Green Coriander (Chopped) - hand full
* Red Chilli Powder - 1/2 tsp
* Turmeric Powder - 1/2 tsp
* Coriander Powder - 1 tsp
* Amchur (Dry Mango Powder) - 1/2 tsp
* Garam Masala - 1/2 tsp
* Hing (Asafoetida) - A Pinch
* Cumin Seeds - 1/2 tsp
* Salt to taste


Preparation

First boil the potatoes in a pressure cooker. Take off the cooker from gas after third whistle. Peel off the skin once potatoes have cooled a little and cut into medium size pieces.

Heat oil in a pan and once it is hot add cumin seeds. As seeds starts crackling add green chillies. Fry for two to three minutes and then add potato pieces. Fry for 2 minutes more.

Add turmeric powder, red chilli powder, hing, coriander powder, garam masala, salt and amchur. Mix well and cook for 2 to 3 minutes.

Garnish with Coriander Leaves and serve hot.
