Akoori - A simple Parsi recipe of spicy scrambled eggs.
Recipe Ingredients
* Eggs - 6
* Desi Ghee (clarified butter) - 3 tbsp
* Onions (chopped) - 2
* Tomatoes (chopped) - 1
* Green Coriander (chopped) - 2 tbsp
* Turmeric Powder - 1/2 tsp
* Cumin Seeds - 1/2 tsp
* Green Chillies (chopped) - 2
* Garlic cloves (chopped) - 2
* Salt to taste
Preparation
Take a kadai(wok) and heat desi ghee in it. Once it is hot, add onions and sauté until golden brown. Add cumin seeds, green chillies, garlic, turmeric powder and salt. Sauté for 2 to 3 minutes.
Then add tomato and sauté for another minute. Lightly beat the eggs and add to the above mixture. Mix thoroughly and cook for 2 to 3 minutes.
Garnish with green coriander and serve hot.
