Adhirasam

Adhirasam - A South Indian Sweet made during festivals like Diwali and marriage ceremonies. You can make it and store for two weeks.



Recipe Ingredients

* Processed Rice Flour - 2 cups

* Refined Oil - For Deep Frying

* Milk - 1/4 cup

* Jaggery (Powdered) - 1 cup

* Cardamom Powder - 1 tsp

* Sesame Seeds - 1 tsp


Preparation

First sieve the rice flour and spread it in a large plate.

Take a small kadai(wok) and make Jaggery syrup to a soft ball consistency. Add cardamom powder and mix well.

Pour the Jaggery syrup slowly over the rice flour, stirring continuously with a ladle till it forms a thick dough. In this process stir continuously and mix well.

Add sesame seeds, put a little oil on the dough, cover and leave the dough for a minimum of one day.

At the time of preparing, sprinkle little milk on the dough and knead it into a soft dough again. Divide into small balls and flatten into a circle over a greased banana(plantain) leaf.

Heat oil in a shallow kadai and once it is hot reduce the flame to medium. Deep fry each adhi rasam one by one to a dark golden brown colour. Drain out the excess oil completely by pressing well with a flat ladle.
