Achappam

Achappam - Kerala Snack made of thin crunchy rice pretzels. It can be made ready and cooked at the time of serving by cooking in hot oil.



Recipe Ingredients

* Rice Flour (Raw) - 1/2 kg

* Coconut Oil - For Frying

* Coconut Milk - 1 cup

* Egg - 1

* Sesame Seeds - 1 tsp

* Sugar - 2 tbsp

* Salt to taste

* Mould - 1


Preparation

First soak the raw rice for half hour. Then drain well and powder the moist rice finely, add half the coconut milk and mix well.

Beat the egg till frothy, add sugar, sesame seeds and salt.

Pout the above into the batter. Beat well to obtain a coating consistency. Now heat the oil, dip the mould in the hot oil to preheat.

Immerse the hot mould in the batter (take care to leave the upper quarter of the mould clean) to coat.

Return to the hot oil, fry a minute, tap gently to let the fritter fall gently into the oil. Fry to a golden brown, drain out the excess oil and serve.
